Well, I did it again. There is something genetically wrong with me. I am unable to use my math skills to correctly figure out how long a turkey needs to cook. Happened at Thanksgiving (it was done earlier than I thought), and today, (way later than I thought).
7:00pm comes, it is our usually dinner time. I pull the turkey out of the oven and it is still 20 degrees below cooked. We are all stared and I don't know what to do.
Thank goodness for Wildtree.
I always keep some cooked, frozen shrimp in the freezer. I pulled it out and defrosted it under warm water. While it was defrosting, I cooked some onions and peppers in Garlic Grapeseed Oil until they were soft, added about 2 tablespoons of Guacamole Seasoning, and a bag of chopped cabbage and about 1/4 cup of water.
Once that was soft, I tossed in the shrimp until it was hot and then served it with sliced avocado on top.
Yeah, I saved the day.
We will be having turkey for dinner tomorrow night!
